Skillet Green Bean Casserole

This recipe was given to me by our daughter Sara.  When she first made this for us at a family function at their house the husband and I were shocked.  This was definitely not a dish that she would make.  It’s a great dish though.  We have switched to making this green bean casserole dish rather than the traditional one.

6 slices bacon, cut into 1-inch pieces
1 large  onion cut into small wedges
1 lb. fresh green beans, trimmed, cut into 1-1/2-inch pieces any brand of frozen green beans
1/2 cup  chicken broth
1/4 tsp. pepper
4 medium  plum tomatoes, cut into small wedges
salt to taste

COOK bacon in large skillet on medium heat until crisp, stirring occasionally. Transfer bacon with slotted spoon to paper towels to drain, reserving drippings in skillet.

ADD onions to drippings in skillet; cook and stir 6 min. or until lightly browned. Add beans, broth and pepper; mix well. Bring to boil. Reduce heat to medium-low; cover. Simmer 40 min. or until beans are tender. (If you are using frozen green beans cut the time in half)

STIR in tomatoes; increase heat to medium-high. Cook 3 min. or until tomatoes are heated through. Transfer to serving dish. Sprinkle with bacon. Serve warm.
