Taco Soup

1 lb of lean ground hamburger (turkey works well also)
1 large can of diced stewed tomatoes (use the ones for chili for extra heat)
2 cans of pinto beans
1 can pinto beans with jalapenos (good luck finding these if you’re up north)
1 can Rotel diced tomatoes and green chilies
1 large can of white hominy, drained
1 pkg taco seasoning
2 pkgs Hidden Valley Ranch Buttermilk Ranch mix
2 cups of water (adjust this depending on how ‘soupy’ you want your dish)

Brown hamburger (turkey), seasoning to taste. Drain in a colander to remove excess grease. Combine all remaining ingredients in a large stock pot. Add hamburger. Cook until hominy is soft. Serve with jalapeno cornbread.

This is a great alternative to a traditional chili for those cold winter days.
