Pea Salad

This recipe has been around as long as I can remember.  My Mom was an excellent cook.  Not only did she prepare food well – she had a HUGE variety of foods for every meal.  This pea salad was among that variety, but was usually prepared at holidays.  Since I have absolutely no recollection of EVER measuring anything – I will attempt to pass the recipe as accurately as I can.

1 can drained green peas

1/2 onion chopped

1/4 cup cubed cheddar cheese

1 chopped boiled egg

1/4 cup Mayonnaise (or Miracle Whip)

Mix all ingredients and chill for at least one hour.  If consistency is too thick add more mayo, too runny – add more boiled egg.  Or if it is WAY too runny – another can of peas. 😀
