Quick and easy Posole

  • Pork tenderloin (1 pound) or boneless pork loin chops
  • 3 Tablespoons Salt-free Southwest chipotle seasoning blend (such as Mrs. Dash)
  • 1 can white hominy undrained
  • 1 cup water or chicken broth
  • 1 can Mexican-style stewed tomatoes*
  • Fresh cilantro

Prep: 3 minutes
Cook: 30 minutes

Cube the pork while it is still icy, but not frozen hard.  Spray with Pam cooking spray and coat with chipotle seasoning.  Brown in preheated cast iron skillet for approximately 8 minutes – turning often.  Add hominy, stewed tomatoes* and broth.  Heat to boil, reduce heat, cover and simmer for 20 minutes.  Garnish with fresh cilantro.

* saute an onion, 1 jalapeno diced and 1/4 t cumin and garlic powder. and add a can of crushed tomatoes if you don’t have the Mexican style stewed tomatoes.
