Chicken Fettuccine Carbonara

Just an FYI, Mark has nicknamed this dish the “Buddha Belly Pasta”.

The idea for this recipe came from Applebee’s.  I seen an advertisement on TV and thought “wow, that looks really good, I can make that”.  A lot of times you can get copy cat recipes for dishes that are served at restaurants, so I began my search.  I could not find this recipe anywhere, so I looked at the picture and wrote down the ingredients that were obvious and then I looked up some other recipes and added some things and created this recipe on my own, with a little help from Google.  The directions are completely out of my own head.  I made it for our family tonight and it was a huge hit.

2 tablespoons olive oil
½ package of bacon, cut into 1/4″ pieces
3/4 cup onions
2 ½ cups sliced mushrooms
4 cloves of minced garlic
2 chicken breasts cubed in ½” strips
1 cup of heavy cream
1 cup of frozen peas, thawed
2 cups of grape tomatoes, cut in half
1 cup of grated parmesan cheese
Fettuccine Noodles, cooked
Salt and pepper to taste

Bring water to a boil and cook the noodles until done while cooking the rest.  Heat olive oil and add the bacon, cook until crispy, remove with a slotted spoon and set aside. Then add the onions, mushrooms and garlic to the oil in the pan.  Cook until mushrooms are done and then remove from the pan with a slotted spoon and set aside.  Add the chicken strips to the pan and cook until done, I prefer golden.  Then add the mushrooms and onion mixture to the pan and add the heavy cream, bring to a boil and simmer for 15 minutes, remove from heat.  You can add a flour roux to thicken if it is too runny for you.  Add the peas and  stir until mixed.  Poor over the noodles and toss until mixed. Garnish with the tomatoes, bacon and  sprinkle the parmesan cheese over the top and serve warm.

Serve with a fresh green salad and garlic toast.

Note:
You could substitute any kind of noodle for the Fettuccine noodles.
Chopped green onions would be a good addition to sprinkle on top before serving
