Canned Dilly Beans

2 lbs trimmed green beans
1/4 cup salt
4 heads of dill
4 cloves of garlic
1 tsp of cayenne pepper
 2 1/2 cups of vinegar
2 1/2 cups of water

Pack beans, lengthwise, into hot jars, leaving 1/4 inch of  head space. To each pint, add 1/4 teaspoon of cayenne pepper, 1 clove of garlic, and 1 head of dill. Combine remaining ingredients and bring to a boil. Pour boiling hot mixture over beans, leaving 1/4 inch of head space.  Remove  air bubbles. Adjust caps. Process pint jars about 10 minutes in boiling water bath. Yields about 4 pints.

Editor’s note: I have not yet tried this recipe, but it looks really good. As an added thought to spice it up a bit, you might put a small piece of Habanero pepper in the bottom of the jar before adding your boiling mixture.
