Pork and Green Chili Burrito

2 lbs cubed lean pork
2 cans chicken broth
2 cans roasted green chili’s (not the small ones, the next size up)
1 can diced tomatoes
6 – 8 large flour tortillas
1 can refried beans
Shredded cheese – your choice
Shredded lettuce
Tomato, diced

Cook, or reheat Pork in 2 cans chicken broth until cooked or hot all through. Add green chili’s and tomatoes. Simmer 15 – 20 minutes.

Spread flour tortillas with refried beans.  Spoon in meat mixture with slotted spoon.  Roll and place in baking dish.  Repeat.

Use a flour/water mixture to thicken sauce.  Spoon over burritos, as much as you like.  Add cheese, as much as you like.  Bake 350 for 20 to 30 minutes until piping hot.

Use remaining sauce for plating.

Add shredded lettuce, and tomatoes as garnish. Serve with sour cream and guacamole.
