Beef enchilada casserole

Ingredients:

1 small onion (chopped)

1/2 bell pepper (I prefer the red ones) (chopped)

1 pound ground beef

1 can cream of mushroom soup

1 can refried beans

1 can red enchilada sauce

corn chips

shredded cheese

Directions:

In large skillet, saute bell pepper and onion.  Add ground beef and brown.  Drain and add soup, beans and enchilada sauce.  Cook until all ingredients are hot.

Spray 9×13 dish with cooking spray.  Layer chips, meat mixture and cheese in that order, repeat.  There will be enough meat mixture for 2 layers.

Cook at 350 for 30 minutes.
