Breakfast Melt

I got this idea from a recipe that I posted a couple of weeks ago, it was the “Primal Tuna Melt”.   Mark and I were talking and thinking of other ideas that we could used for substitutions for the fillings and I had suggested making a breakfast melt.

Bell Pepper of your choice
Eggs
Sausage or Bacon
Cheese of your choice

Cut your bell peppers in half and clean the insides out.  Brown your sausage or bacon to your liking, we used a ground breakfast sausage, drain and set aside.  Scramble whatever amount of eggs needed to fill the quantity of peppers you are serving.  When the eggs are almost done but still a little bit runny, put the sausage or bacon back in with the eggs and cook until done.  While your eggs are finishing up, take your peppers and broil them for 2 minutes then take them out of the oven.  Stuff the peppers with the egg mixture top with a cheese of your choice, we used shredded Cheddar, then broil for another 2 minutes, garnish with sour cream and/or salsa.  You eat them alone or make a side dish of hash browns.

*When you are broiling the second time make sure you watch them closely, the cheese will burn quickly.  Ovens vary in the temperature settings, some are hotter than others.  Our oven did nicely at 2 minutes

This is a quick and easy meal that is not expensive to make and there are so many varieties of substitutions you could use.
