Deep Fried Mushrooms

I used to make my own deep fried mushrooms and then I found a brand in the frozen section at Wal-Mart that Mark and I really liked. That was so much easier, and they were really good. Well, a couple of weeks ago we decided we wanted some for dinner and Wal-Mart didn’t have any. I already had my mind set on deep fried mushrooms so I looked on the internet for a good recipe. I came across this one, and these have got to be the best deep fried mushrooms I have ever eaten.  Personally, I think they are better than restaurant mushrooms.

1/2 cup of flour
1/3 cup cornstarch
2 tbsp baking powder
1 tbsp oil
salt to taste
2/3 cup water
Mushrooms of your choice
Oil for deep frying
Extra flour for coating the mushrooms
Ranch dip for dipping

Put enough oil in a fryer or cast iron pan to fry the mushrooms.  Make sure that there is enough oil so that the mushrooms float, you don’t want them touching the bottom of the pan.  I use cast iron because it gets hot quicker and foods fry easier and more even.  Heat your oil to 350 degrees.  If you don’t have an oil thermometer you can stick a wooden spoon in the oil and if the spoon bubbles it’s close enough.  Rinse your mushrooms and let them drain.  Mix all of your dry ingredients, then add the oil and water.  Whisk until blended well.  You may not use all of the water and you may use more.  That will depend on how thick you like your batter. Put enough flour in a bowl to coat your mushrooms lightly, shake off the excess flour.  Dip the mushrooms in the batter and shake off the excess batter then very carefully ease the mushrooms into the hot oil.  When the water from the mushrooms start to make the oil splatter they should be done.  I would take one out and test it to get an idea of how long you need to fry the rest.  Different kinds of mushrooms will cook differently.  When done they should be golden brown.  Take them out with an oil strainer, sprinkle lightly with salt and let them drain on a plate lined with a paper towel.
