Salsa Verde

INGREDIENTS

  • 1 1/2 lb tomatillos
  • 1/2 cup chopped white onion
  • 1/4 cup cilantro leaves
  • 1 Tbsp fresh lime juice
  • 2 Jalapeño peppers OR 2 serrano peppers, stemmed, seeded and chopped (you can use whole for more heat if you want)
  • Salt to taste
  • 2 cloves garlic

Place tomatillos in a pan of water and bring to a boil.  Simmer for 5 minutes (I also put my jalapenos in the pan whole, since I left seeds in.)

Place all ingredients in blender or food processor and pulse until smooth.  Makes about a quart.  Refrigerate.

(The original recipe called for 1/4 t. sugar….no way)  I only had a pound of tomatillos so I adjusted everything else.  A taste when it was done…yummy!
