Muffin Pan Frittatas




Cooking spray

1 tablespoon olive oil

1 cup chopped fresh mushrooms

1/4 cup chopped bell pepper (color of your choice)

2 tablespoons chopped onion

a few sprigs chopped cilantro

6 eggs

1/2 cup milk

1.4 teaspoon salt

1/8 teaspoon ground black pepper

1 cup shredded Cheddar cheese (I used Tillamook 4 cheese Mexican style)


Preheat oven to 350 degrees.  Spray 12 muffin cups with cooking spray.

Heat olive oil in skillet over medium heat; cook mushrooms, bell pepper and onion until softened.

Whisk eggs, milk, salt and pepper together in a bowl.  Mix cook vegetables, cheddar cheese and cilantro into egg mixture.  Spoon about 1/4 cup mixture into each muffin cup.

Bake in the preheated oven until frittatas are set in the middle and lightly browned, about 20 minutes.

Remove from oven and let rest 5 minutes.  Run knife around the edge of the muffins and turn out on wire rack.

My next adaptation to this recipe… Add some seeded diced jalapenos (because everything’s better with peppers).  Also maybe some type of breakfast meat.  And definitely a dash of tabasco (because everything’s better with that bite).
