Zucchini Rice Casserole

1.5 cups short grain brown rice
3 cups chicken broth, heated
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 large onion, chopped
4 cups zucchini, diced
1.5 cups milk
3 tablespoons flour
2 cups shredded pepper jack cheese
1 cup corn
8 ounces’ sausage, browned
8 ounces’ cream cheese
¼ cup chopped pickled jalapenos

Preheat oven 375 degrees

Put the rice, peppers and onion in a 10×13 pan.  Add hot broth, cover with foil and place in oven.  Bake 45 minutes.  Remove foil, add zucchini, stir and bake another 35-45 minutes.

While the rice is cooking, whisk milk and flour in a saucepan, cook over medium heat, stirring constantly until thick and bubbly.  Remove from heat, add cheese and stir till melted.  Stir in crumbled sausage and corn, set aside.

When rice is done, stir in the cheese sauce.  Dollop cream cheese on top, sprinkle remaining shredded pepper jack and sprinkle the jalapenos over the top.  Return to the oven and cook 10-15 minutes, let stand 10-15 minutes and serve
