Brown Sugar Meatloaf


This recipe comes from my best friend John. See his notes at the bottom. It looks tasty!




1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 tsp salt
1/4 tsp ground black pepper
1 small onion, chopped
1/4 tsp ground ginger
3/4 cup finely crushed saltine cracker crumbs


– Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5×9 inch loaf pan.

– Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.

– In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.

– Bake in preheated oven for 1 hour or until juices are clear.


– I tweaked it some, I used 1 lb of hamburger and 1 lb sausage added onions and green peppers.

– Here is where it gets good; I used the grill instead of the oven. I used 2 aluminum loaf pans one for the meatloaf and one to catch the grease (poke holes in the one for the meat so grease drains)  I wadded up some foil to keep pan off bottom.  Grilled using indirect heat for 90 to 120 minutes until done by a thermometer.
– You can decrease the amount of brown sugar  (I used 1/4 cup-ish) on the bottom, before adding BBQ sauce, then the meat mixture.  This works great if you don’t want it too sweet.
– I did baste it with BBQ sauce 30 min before being done.
– The only tweak I will do next time is line pan with bacon then add meat mixture.
